Sweet Potato Shepherd’s Pie

Ingredients

4 medium sweet potatoes

1 lb ground beef or turkey

1 onion, chopped

2 cups carrots, chopped

1 cup frozen peas

1 (6 oz) can tomato paste

1 tsp salt

1 tsp garlic powder

1/4 tsp pepper

1 tsp dried thyme

1 tsp rosemary

2 tbsp soy sauce/tamari

Method

Bake sweet potatoes at 400 for about 45-50 minutes until soft.  Remove skins and mix with mixer until smooth and fluffy.  I use my kitchen aid mixer and it takes no time!

Brown meat with onions and carrots in a skillet over medium heat until no pink remains.

Add peas, tomato paste, salt, pepper, thyme, rosemary, and soy sauce and stir until evenly mixed and heated through.  Pour mixture into a 9×9 baking dish or 9 in pie dish.

Spread sweet potatoes over the top and bake at 400 for about 20-25 minutes.

Serving Suggestions

I like to prep the sweet potatoes and chop the veggies ahead of time so that this meal comes together quickly.

This is a great meat to take to others.  It freezes well.  Just defrost in the fridge before cooking.

Leftovers of this are tasty!
